Cranberry sauce with rosemary from Copas

Thursday 30 August 2007 08:02

The Copas family this year celebrate their 50th year of producing luxury turkeys for Christmas.

After a long search for a cranberry sauce to recommend as a suitable accompaniment for their turkeys, they decided to launch their own three years ago. Since then, the range has grown to include three more of the Copas family's favourite recipes.

Chef's comments: "This is a lovely cranberry sauce that has a perfect consistency - not too runny to slide off your Christmas turkey. The sauce has a fantastic smell of real cranberries and distinctive rosemary that really carries through when tasting - simple, but very effective." – Mark Read, corporate head chef at London’s Mango Tree restaurant
