Details Hand-rendered from the fat of free-roaming, acorn-fed pedigree Iberian pigs in Spain's Extramadura region, the fat is said to have a 'umami' or 'fifth flavour' taste that is deeply savoury with a sweet, nutty note. As well as adding depth of flavour to roasted potatoes and vegetables, it can also be used to baste game and as a base for soups and risottos.
