Product Alto-Shaam cook-and-hold smoker ovens

USP The new ovens allow caterers to continue to offer the wood-smoked flavour of barbecued food as the summer recedes. As well as cooking and holding, the smokers will hot smoke meats, poultry and fish and cold smoke fish and cheeses with mild, medium or heavy smoke. They are designed to cut costs and energy consumption.

Range Single and double units are offered in both manual and electronic versions. The latter have a temperature probe, eight programmable menu options and the patented, cost-cutting SureTemp heat recovery system.

Details The stackable ovens use pure wood chips (apple, cherry, hickory and maple, sold in 9kg packs) to tenderise and flavour meats so no artificial ingredients are needed. Features include stainless-steel interiors, rib racks and shelves, internal and external drip trays, and a choice of castors (standard) or legs (optional).
