Charlie Trotter to move into Elysian Hotel in 2008

Iconic US chef Charlie Trotter is to open his second fine dining restaurant in Chicago’s new Elysian Hotel it was announced this week.

Trotter will also run a causal restaurant, room service, and banqueting departments for the luxury hotel and private residence development, which is due to open in October 2008.

He told the Chicago Tribune that the as yet unnamed restaurant would be significantly different from his flagship restaurant Charlie Trotters.

He said: “There’s always a concern with a second restaurant that you’re competing with yourself, and we debated this internally but we’re not worried. This will be unlike anything else in town.”
