The latest six-, 10-, 14-, 20- and 40- grid Alto Shaam combis from Equip Line use closed system technology that retains more steam in the cavity for speedier roasting, steaming and baking - thus retaining more flavour, colour and texture.

A two-speed fan and wide temperature range provide the flexibility to quick-steam at high temperatures or slow-steam delicate items at lower temperatures, while an in-built Retherm program will reheat plated meals without leaving water deposits or dried edges.

Standard features on the stackable combis include temperature probe; fully automatic, single-key cooking controls; a protective door-stop delay; automatic steam boiler fast flush; electronic self-diagnosis; and easily-removed rubber door gaskets.

All models come with a hand-held hose to add water to pans, cool down the oven, and clean the interior, and there is optional PC software for oven programming and HACCP documentation.
