Fairyhill of Wales to source ingredients within 10-mile radius

Fairyhill hotel and restaurant in Wales has joined the ranks of the UK’s eco-friendly restaurants by deciding to source all of its ingredients within a radius of 10 miles.

The five-star property on the Gower Peninsula aims to drastically reduce its carbon footprint by cutting its food miles and hopes to boost business for local farmers.

A spokesman for the hotel said: “The kitchen at Fairyhill has always used the fine produce close at hand from farmers and fishermen of Gower and the 10-mile menu will further highlight our association with our neighbours.”

The 10-mile menu will be made up of traditional lamb, steak and seafood dishes sourced from local suppliers.

It will include Gower bass with garden greens and laverbread sauce; salt marsh lamb with savoury lamb faggot, wild garlic and potatoes; and locally-picked berries suspended in jelly.
