Ryedale white cow's cheese

Yorkshire blue cheese maker Shepherds Purse has developed its first white cows' milk cheese under the brand Ryedale.

Made by hand from local milk to an age-old local recipe, Ryedale has a clean and delicate texture with a light lemony aftertaste.

Four varieties of the cheese are available including Ryedale Pure and Simple; Bell Red Pepper and Balsamic Vinegar; Thai Lime, Chilli and Mint with Coriander; and Italian Herb & Garlic.

The cheese has a firm texture when first removed from the fridge, but if left to warm slightly, it becomes almost spreadable. The taste is described by the company as being slightly sweet and creamy followed by a mild tang.

The new cheese selection follows the success of the company's Yorkshire Blue, which won gold at Caterer's Excellence in Food and Drink Awards in 2007.
