Chefs from the kitchens of previous Roux Scholarship winners are among 20 competitors tilting for the prestigious title in 2007. They include Ryan Simpson from 2003 winner Simon Hulstone's Elephant Restaurant & Bar in Torquay and Armand Sablon from 2002 winner Andre Garrett's Galvin at Windows in London.

It recently developed its management development programme for supervisors and managers, based on 11 training workshops. This has resulted in 20 out of 47 site managers being promoted internally. HOTEL GROUPS WITH 11 OR MORE SITES Winner Malmaison and Hotel du Vin Employees 1,500 A "real focus on the product", "incredible at what they do", and the brand's ongoing desire to innovate were just some of the comments made by the judges about Malmaison and Hotel du Vin.
