To make the vegetable ceviche, slice the mange-tout and spring onions thinly lengthways, combine with the rest of the ingredients and season. To prepare the leek purée, chop the leeks and sweat in butter. When soft, add the water and evaporate on a low heat. Season and purée in blender.

For the pear parfait sponge base, preheat the oven to 180°C. Whisk the eggs and sugar until they reach the thick ribbon stage, then fold in the sifted flour. Using a pallet knife, spread the sponge about 2mm thick onto a Silpat and bake for 5-6 minutes in the preheated oven. Leave to cool.

For the rabbit en croute, joint the rabbit by removing the front and back legs, setting the loins aside. Place the legs in a vacuum pouch with the garlic, thyme, coriander seeds and peppercorns, vacuum and cook in a preheated water bath at 84°C for 9 hours. Once cooked, chill over ice.

Tax consultancy RSM Tenon has started offering VAT health checks to hospitality businesses after the taxman launched a crackdown on tax evasion in the restaurant sector. Earlier this month, HMRC revealed it was investigating 530 restaurants for tax evasion in London, the North-west and Scotland.

Food service wholesaler Brakes Group has won gold in the food and drink category at the Green Apple Awards for Environmental Best Practice. Brakes beat the Green Earth Appeal and London Clubs International to win the award, which was announced at a ceremony at the House of Commons on Monday (14 November).

Mark Hix is to operate the restaurant at the new luxury boutique hotel Belgraves, which is set to open in London in December. The 80-seat restaurant will be Hix's sixth restaurant and his second restaurant in a hotel. He already oversees Hix at the Albemarle in Brown's hotel, a Rocco Forte property.

Kristian Curtis, junior chef de partie from Michelin-starred Simpson’s in Birmingham was named the British Culinary Federation Young Chef of the Year 2011. In second place was Aaron Darnley from Edmund’s Restaurant also in Birmingham and third was Matthew Ambrose from Claridges, London.

Hamburger restaurant chain Byron has announced it is to stop serving its hamburgers rare, following the intervention of a local authority. The group, which operates restaurants across London, said that owing to one local authority - which it declined to name - it would no longer offer its hamburgers cooked less than medium rare.
