Iced strawberry parfait, by Chris and Jeff Galvin

parfait galvins cateysPlace the egg whites in a mixing bowl. Bring the sugar and water up to 120°C. Whisk the egg whites until frothy then pour the boiling syrup on them. Continue whisking until cool. Whip the cream to soft peaks then fold in the strawberry purée; finally fold in the cool meringue. Pipe into 6 x 4.5cm rings and freeze.

Slow-cooked Cornish lamb shoulder 'boulangère', confit of tomato & courgette, smoked anchovy jus, by Chris and Jeff Galvin

lamb galvins cateysSear the lamb on all sides in very hot oil. Once it's nicely browned, transfer it to a braising pan. Now fry all of the vegetables and garlic until golden in the pan you used to colour the lamb. Put with the lamb.

Escabeche of yellow fin tuna, aubergine purée and herbs, by Chris and Jeff Galvin

escabeche galvins cateysCannellate the carrots down the sides three times and slice them at a 45° angle, 1mm thick. Put them in a pan with 30ml of olive oil and sweat for five minutes until they start to soften. Add onions and garlic and sweat for five minutes more till the onions are glassy.

Video: Elena Salvoni wins Lifetime Achievement Award at the Cateys

Elena SalvoniElena Salvoni was one of the big winners at tonight's Cateys, picking up the Lifetime Achievement Award at the hospitality industry Oscars. Now in her 90s, Salvoni - who also won the Manager of the Year Catey back in 1996 - has reluctantly retired from Elena's L'Etoile after a lifetime dedicated to restaurant service.
