There are just three weeks left to enter your staff for the Hospitality Apprenticeship Awards 2011. The awards are supported by awarding body EDI, as well as the British Hospitality Association (BHA), Institute of Hospitality (IoH), and British Institute of Innkeeping (BII).

CH&Co has been named as the UK Ruban d'Honneur - a prestigious award which sees it put forward as a contender for a top prize at the European Business Awards later this year. The independent caterer was awarded the title in the RSM International Entrepreneur of the Year Award category in the 2011 European Business Awards, sponsored by HSBC.

Now in his sixth year at the Ledbury, the hard work of chef Brett Graham is paying dividends. He also has the admiration of his mentor Philip Howard, chef-patron, at the Square, who said: "Graham is now in my opinion, the finest chef in the country."

The winner of this year's award clearly demonstrated an outstanding and long-term commitment to the public sector and has made a significant difference to service users in the UK. Derek Johnson is employed by Leeds City Council as principal catering manager, overseeing the community meals service.

Less than a year after opening his first restaurant, Castle Terrace, the 2011 Michelin Guide had signalled chef Dominic Jack as a rising star - and he is widely tipped to earn his first Michelin star in 2012. Edinburgh-born Jack trained at Telford college, but he honed his budding talent at Gleneagles hotel.

This award recognises the company that has shown the greatest commitment and taken the most innovative steps towards developing food that meets the growing demand for healthier, nutritional eating. And in this, the Hesley Group has certainly proved itself.

Few in the hospitality industry could fail to be impressed by any restaurant group that has emerged from recession stronger than it went in. But that is exactly what has happened to Prezzo. The group is run by Jonathan Kaye, cousin of Sam and Adam Kaye, founders of the Ask and Zizzi dynasty.

One of the main criteria of this important award is that the winner has displayed a long-term commitment to environmental practices. More importantly, it needs to show that its green policy is driving it on to become even more sustainable. Well, that's certainly true of Red Hotels.
