Cotswold House in Chipping Campden, Gloucestershire, this week relaunched its fine-dining restaurant, which had been closed for two years. The Dining Room has opened following a mild refurbishment in the space formerly occupied by Juliana's which closed in 2010.

Dust the tofu in flour. Heat 2cm oil in a wok until very hot, fry the tofu until crisp and lift out. Tip out all but 1/2tbs oil and add the ginger, mushrooms, chilli, shallots and spring onions and stir-fry quickly. Add the spring greens and broccoli with a splash of water to help steam. Then add the rice vinegar, sesame oil and mirin and mix with the tofu.

Justin Pinchbeck is leaving his position as hotel director at the five-star country house hotel Lime Wood in the New Forest to become the new general manager of London's five-star Berkeley hotel. He is expected to take up his new role within three months, replacing Klaus Kabelitz.

Hertfordshire-based hotels group Beales Hotels has purchased the freehold of West Lodge Park Hotel in Cockfosters after holding the property's lease for more than 65 years. The family-run business, which also includes the four-star Beales Hotel in Hatfield, has run the 59-bedroom hotel since 1945.

Boutique hotel Strattons in Swaffham, Norfolk, has further bolstered its green credentials with an innovative new approach to removing spent coffee grounds from its waste stream.
