Malmaison is to open a 91-bedroom hotel in Dundee, as part of the second-largest regeneration project in Scotland. The new 91-bedroom Malmaison Dundee is being created on the site of the old Tay Hotel, a listed city-centre landmark building, and forms part of the £1b Dundee Central Waterfront Development.

Pub beer sales fell yet again in 2011, down 3.4% for the year, although off-trade sales were also down. The British Beer and Pub Association's (BBPA) Beer Barometer showed that the falls had helped contribute to 9,000 job losses in the beer and pub sector in 2011.

A bill aimed at reducing the red tape around staging live music has been passed through the House of Commons today. The bill will exempt venues, including pubs, with a capacity of 200 or fewer from the need to obtain a licence for live music before 11pm.

London-based pub and bar operator Food and Fuel has bought the Prince of Wales in Putney, London, from pub company Etive. The deal for the tied leasehold business, which was for an undisclosed sum, takes Food and Fuel's estate to 11 sites.

Greene King has unearthed a 75-year-old beer brewed to celebrate the coronation of Edward VIII, who was never crowned. The Suffolk brewer's Coronation Ale was due to be sold around Britain to commemorate the anniversary of the king's first year on the throne in 1936.

More than 600 concierges from all over the world will gather in London next week for the annual congress of The Golden Keys. It is the first time that the congress of the professional association for concierges - known widely as Les Clefs d'Or - has been held in London since 1975.

Figures that suggest some hospital trusts commit as little as 90p per meal, while some spend as much as £22.31 per patient per day, have been dismissed as misleading and inaccurate by industry professionals.

Spanish hotel company Meliá Hotels International is to open a third hotel in the UK - and its first outside London. Construction is set to begin on the four-star, 208-bedroom Innside Manchester Hotel during the second half of 2012.

Aubaine, the French Provençal bistro, boulangerie and pâtisserie group, has opened a sixth outlet with screening room on Dover Street in London's Mayfair. Open throughout the day and evening, the 80-seat Aubaine Mayfair will serve a seasonally-changing menu of Mediterranean dishes.

Seniors in Thornton, Lancashire, has been named the best British fish and chip shop in the National Fish and Chip Awards 2012. Run by brothers Alastair and Dominic Horabin, the shop beat 10 other regional finalists to win the national title in the annual competition, which is run by seafood authority Seafish.

Two late-night venues at St Matthew's Church in London's Brixton have been put up for sale by their owner, Chicks Ltd. Davis Coffer Lyons is dealing with the sale of Babalou bar, restaurant and club, as well as Mass nightclub, both of which are housed in the 1820s building.

Average pub property prices remained broadly stable in 2011 but more of the pubs sold stayed as pubs, according to property agent Christie & Co. In its Business Outlook 2012, Christie & Co indicated that the rate of closures was slowing. Some 64% of pubs sold remained as pubs during the year.

Tom McLachlan has been named the De Vere Academy of Hospitality's National Chef of the Year. McLachlan, 24, beat 99 other apprentices to carry off the title. Following eight regional finals, he joined 15 young chefs in the final cook-off in London.

Compass Group has launched a new mix-and-match food offer aimed at customers looking for an easy approach to healthy eating at breakfast or lunchtime. The "whole + sum" concept is made up of three mix-and-match components, and no complete dish adds up to more than 500 calories.

US-based hospitality company Carlson and the Rezidor Hotel Group have joined join forces to become the Carlson Rezidor Hotel Group. While the legal status and ownership for the two companies are to remain the same, the new group will focus on the management of its brands.

British brewers showcased a new range of lower-strength beers in Parliament yesterday, following the change in taxation introduced last year, which lowered the tax for beer under 2.8% abv. The event was organised by the by the All-Party Parliamentary Beer Group and attended by Health Minister Anne Milton.
