Job Overview

Our client is looking for a Food and Beverage Assistant Manager for this beautiful hotel near Watford.

You will be responsible for the Restaurant and Marquee, Restaurant Supervisors and Food and Beverage Team Member.

You will take responsibility in the absence of the Food and Beverage Manager and fully support during his/her attendance for the SBG restaurant and Marquee including both bars within the hotel.

You will also ensure that the Restaurant delivers a high quality service to the customer, maximising on all sales opportunities and controlling costs and payroll as per budget in order to exceed expectations.

The post is also responsible for Risk Management in with your areas of responsibilities, covering Health & Safety, Food Hygiene, DDA, and Fire Safety, ensuring that the hotel is fully compliant with all legislative responsibilities.

Responsibilities

In liaison with the Food and Beverage Manager and the Financial Controller, produce forecasts within your responsibility, on a weekly basis covering sales volumes, revenues payroll and associated costs, compared to budget. The forecast is used to refine plans to protect business performance.

To ensure that payroll is effectively managed, to include correct use of Payroll system, and effective time & attendance monitoring, to agreed productivity targets.

To liaise with the head chef and ensure an effective costs and F&B control system is in place and stock levels are maintained within agreed limits.

Works closely with the Hotel's Maintenance Manager to protect the Company's assets through planned maintenance programme within your areas of responsibilities.

Identifies opportunities to increase/maximise revenue and/or reduce costs and prepares recommendations and proposals to General Manager.

In liaison with relevant Team Managers, identify and implement consistent standards required to deliver Operational Excellence.

By personal action planning, objective setting and departmental plans, ensure that all customer facing Team Members have absolute clarity on their personal responsibilities to seek out and exploit all sales opportunities within their remit -to include up-selling, cross selling other departments.

All competitor visits are documented, and analysed to identify, consider, communicate & implement as appropriate our unique selling advantage.

To ensure an effective costs and Restaurant control system is in place and stock levels are maintained within agreed limits.

Provides your team with timely and constructive feedback on personal and departmental performance and that this process is cascaded down throughout the teams.

Supports, coaches and trains your team providing them with the skills and knowledge to effectively manage their department

To ensure that the business complies with all legal and statutory requirements - (Food Act, HASAWA, COSHH, DDA, Fire Regulations, Liquor Licensing)

To ensure that health & safety management systems for you areas of responsibility are in place, and maintain a proactive approach to health & safety

Experience

You ideally will have a strong background in Food and Beverage Management within hotels.

You must be customer focused and driven to achieve high standards.

Salary and hours

??18,000- ??19,000 (depending on experience)
5 out of 7 days, 45 hours per week
