The Exceptional Person

As Head Chef you will be experienced in high quality restaurants - 75 Covers +
Some Hotel experience preferred but not essential
The Head Chef will be classically trained to 1 Rosette minimum standard
As Head Chef you will be enthusiastic, with vision to map out the future style of the food offering
As Head Chef you will be motivated by modern exciting menus using classical methods. Fresh clean presentation of dishes keeping it contemporary and attractive
Ambitious for accolades to 2 rosettes
Good people management skills capable of taking a team from no awards to a minimum of rosette
Inspired to use local ingredients making traditional regional dishes fashionable
Strong financial skills to develop a profitable yet quality range of menus
Good management of suppliers and back door procedures, wastage, portion control.

Salary ??32,000 + bonus of 8% of salary (3% Christmas achievements and 5% on sales throughout the ret of the year
