Boutique hotel Strattons in Swaffham, Norfolk, has further bolstered its green credentials with an innovative new approach to removing spent coffee grounds from its waste stream. By naturally drying the grounds and re-bagging it in its original packaging, it can be handed out to guests as a horticultural compost.

The former owners of the Dial House hotel in the Cotswolds have opened this coffee shop in Bath as the first of a planned chain. Housed in a Georgian property on Kingsmead Square, it is spread over two floors with seating options including banquettes, high chairs and sofas.

Whitbread has made Christopher Rogers the new managing director of Costa Coffee, following the departure of John Derkach, who will become chief executive of restaurant group Tragus. Rogers is currently group finance director at Whitbread, and will now be tasked with expanding the Costa business.

Mozzo Coffee, founded by 2011 Acorn winner Grant Lang, is set to open a new store at in Southampton next month. The new site at 66 Bedford Place will open on 4 April and is designed to showcase Mozzo's products to Hampshire's coffee community and provide a platform from which to develop a team of Mozzo Coffee Masters.

Consumers are certainly tightening their belts, and may even have resolved to drink less in 2012, but one luxury it seems we can no longer contemplate cutting back on is coffee. Since 2005, the branded coffee chain market has doubled and is now estimated to be worth £2.1b according to Allegra Strategies.

The branded coffee chain market has continued to grow in the UK and is expected to continue until at least 2015. The likes of Costa, Starbucks, Caffè Nero, Pret A Manger and Eat have shown "incredible resilience" by growing sales by 10% in 2011.

Costa Coffee has opened its first drive-thru coffee shop in the UK at Nottingham's Castle Marina retail park. The site is the first of six planned across the UK that are due to open by the end of 2012. It will offer seating inside and outside for 100 customers and will be open from 5.30am to 9.00pm Monday to Saturday and 7am to 9.00pm on Sundays.
