Eleven of the capital's leading chefs will take over the London Eye this October transforming one of its capsules into a mini restaurant as part of the 2010 London Restaurant Festival.

Italian chef Francesco Mazzei has become the latest guest chef at high street chain Pizza Express and has created a range of dishes that will appear in restaurants next week. Mazzei, who runs Italian restaurant L'Anima, took time out to speak to Kerstin Kühn.

Leading chefs will be treating diners to meals on board the London Eye as part of the London Restaurant Festival this October. The pods, which can accommodate up to 10 diners, are being auctioned off each night of the festival, which runs from 8 October to 13 October.

Sweat the garlic, chilli, shallots, and thyme in a little olive oil. Add the braised squid, dried fregola, a pinch of salt, and fish stock. Leave the fregola to simmer for about six minutes. When it is almost cooked, add the mussels, clams, shrimps, cherry tomatoes and tomato sauce.
