The French glacé cherries masterclass programme got off to a great start at Westminster Kingsway College. The class was presented by Yolande Stanley MCA, French glacé cherries ambassador and lecturer at Westminster Kingsway College and around 25 professionals attended.

Yolande treated the audience to an insight on her new recipes using French glacé cherries like they have never been used before, highlights included a French glacé cherry chutney, French glacé cherry oatcakes, and a French glacé cherry strudel. She made enough for the whole audience to try and experience just how versatile French glacé cherries really are.  Yolande demonstrated some very useful and masterful techniques to the audience, including creating a Kirsch Diplomat Cream, and a Strudel from scratch.  All the recipes had a modern twist, and made the natural candied fruit the main feature of the dish rather than just an addition for decoration. 

As it was the first of the series, as a special treat, French glacé cherries also sponsored a raffle to win six bottles of wine from Provence, the home of French glacé cherries. The lucky winner was Summer Sharkey from the Marriott County Hall Hotel. 

Yolande Stanley will be holding a series of masterclasses in catering colleges around the UK over the next few months.
