Frozen food is often fresher than "fresh" produce - would you agree?

If food is frozen at point of picking/harvesting/fishing does that make it fresher than food delivered to restaurants a day or so later? Or is "fresh" produce always best?

I think it probably depends on the type of food and its suitability for the freezing process. Using frozen food can certainly help with controlling wastage.

NOt necessary. Fresh is fresh. But it also depends of food cost and how your kitchen staff can do miracles.. I talso depends on your inventory, I mean can or are you able to buy everyday fresh products or is it better to buy at a wholesaler and keep it in your freezer?

People normally find the difference between froozen and not (if put side by side) . But all depends on the profissionalism os staff, etc
