Planning to start an indian recipe blog. Your opinion about indian cuisines( Good and Bad welcome)

We need to see authentic Indian food replace the stereotypical image if the high street take away, in a similar way to how delicate and fresh pacific rim and far eastern cooking has evolved in the UK from it's MSG high street origins.

Maybe I have a skewed perspective because I live in London where we have a wealth of different ethnic cuisines to choose from, but I think it's interesting - and positive - that we are seeing more recognition of the fact that that there is no such thing as Indian food, rather different styles of cooking from the various, geographically very disparate, regions of that part of the world.

This is reflected in the ready meals you see in the supermarkets nowadays: whereas ten years ago you would have bought a chicken curry, plain and simple, now your purchase might name-check Goa, Hyderabad or Kashmir.

Food plays am important role in breaking down prejudice and bringing together different cultures, so it can only be a good thing if we begin to appreciate the sophistication and variety of Indian cuisine.

Why are some menus based more around breads than rice? Why are dosai only served in some restaurants? Why is coconut prevalent in some dishes but not others? Why do some restaurants offer beef or pork when other don't? As diners learn the answers to these and other questions, they'll begin to understand Indian people, culture and religion better, it seems to me.
