Merrett finds backing

Paul Merrett, formerly head chef of London's Interlude restaurant, has secured financial backing to open his own restaurant in August.

The chef was awarded his first Michelin star this year for his cooking at Interlude, but by the time the guide was published the restaurant had been closed by owner Charles Ullmann (Caterer, 10 December 1998, page 8).

Merrett is to be backed by investors Merriman Cooke and Gary Cawthorne, who are putting £2.4m behind an 80-seat restaurant in London's Tower Street, to be called the Site.

Merrett said he is in the process of recruiting a "large chunk" of his former kitchen brigade to join him at the Site, expected to open in the first week of August.
