What was your best subject at school?
Maths
What was your first job?
I helped bring flour and dry goods into my local bakery in Senegal. I didn't get paid as I was only young – I did it for the free bread
What was your first job in catering?
Kitchen porter at the Hilton in Park Lane – a long time ago now!
What do you normally have for breakfast?
Porridge every morning with my kids
Which is your favourite restaurant?
I couldn't say, there are too many amazing restaurants to pick from that are all great in their own ways
What do you do to relax?
I love to just lie down and listen to the radio
What is your favourite drink?
I don't really drink, but I do like a gin and tonic or a glass of red wine after service
What is your favourite cuisine?
Asian, specifically Japanese or Thai – nice and spicy
What do you always carry with you?
Believe it or not, broccoli
Which person in catering have you most admired?
I used to work for Rowley Leigh at West Street off Shaftesbury Avenue. He is a very good chef and I admire him a lot. I have a lot of good memories
Which person gave you the greatest inspiration?
My mum
Describe your ultimate nightmare?
Running out of a potatoes during a Sunday service
When and where was your last holiday?
Lisbon in the summer
When did you last eat a hamburger?
Last Monday. Me and my kids go to the Collab in Walthamstow all the time

Heinz baked beans. On toast
If you had more time, what would you do?
Spend more quality time with my wife and kids
